Whata way to start the day:)

Last winter we were back vacationing in Nuevo Vallarta. It's located just north of Puerto Vallarta. This literally is our favorite vacation spot! We love the people, the culture and the food!

We usually eat breakfast in our room but there is a favorite place we occasionally go to that is walking distance from our hotel called the Moonstar Cafe. Kal especially loves this place and loves their smoothies. I am not a person who likes to drink things like that but on this trip, Kal convinced me to try one. And it was delicious! So delicious that I couldn't wait to go back for another one! When we came home, I searched for a recipe that looked similar. I didn't have to look too far because I found it in a cookbook that I already had, The Greek Yogurt Kitchen by Toby Amidor. It's a fabulous book and I have used it for other recipes but didn't realize it had this delicious smoothie in it.
But I also had one other problem. I had blender that was 100 years old and was no way going to whip up this delicious concoction. Although the Vitamix was wonderful and of course could do the job, I did not want to take out a loan to buy it, so I settled for the Ninja Professional, and it did the trick! I had my recipe and my blender, and I was ready to go! This is a super quick, nutritious and delicious breakfast and only 211 calories or less. Try it. I think you will love it too!
Very Berry Greek Smoothie Just like Moonstar
1 1/2 cups of unsweetened strawberries (or mixed frozen fruit of your choice)
1/2 cup of nonfat plain Greek yogurt
1/2 cup of 100% cranberry juice (I use low sugar or 0 sugar which cuts the calories)
2 teaspoons of honey
Combine the frozen fruit, yogurt, cranberry juice, and honey in your blender and blend until smooth. (I pour the juice in first, then the yogurt, then the honey and last the fruit as I think it's easier to blend that way) Pour into a tall glass and enjoy!
