"Sylvia Fratti's Cole Slaw"

My mom, Sylvia Fratti, used to make her own Cole Slaw.
What I remember about it, besides

being delicious, was that she would put our initials in grated carrot on top of the bowl, LAB. Liz, Bobby and Al. I don't know why she did this. Maybe to make us feel special. Maybe it was her way of decorating. Whatever it was, it is a good memory and that's all that counts.
I never got her recipe, and so I searched all over for one, found a couple that were close, tweaked them a little and bingo, I had it! Here it is for you. Just in time for the fourth. Next time I make it I think I'll add my grandchildren's and great grandson's initials. GSZL, Gabby, Sophia, Zach and Levi. Why not make it memorable for them too!
Sylvia Fratti's Cole Slaw
2 lb. cabbage shredded
1/2 of a large, sweet onion, grated
1 small carrot grated
1 teaspoon of salt
1/2 c sugar
1/2 c mayonnaise
1/2 c plain vinegar
1/3 c cold water
Place first three ingredients in an airtight container
Mix the remaining 5 ingredients and pour over
Seal container and shake well to mix liquid into vegetables
Refrigerate at least overnight (inverting container occasionally to distribute
liquid)
Serve with slotted spoon. Serves 10-12
And if you want to create memories grate a little extra carrot for the top!

I made it! I had to adjust the quantity (in half) for just the two of us. You're right Liz! It's delicious and was a great addition to our 4th of July picnic dinner!
