Margie's Rice

My good friend Margie makes the most delicious rice. It's very easy, very quick and very good. I cooked it for another friend of mine the other night and she had to have the recipe. And she doesn't even like to cook!


1 onion, finely chopped

3 tablespoons of olive oil

1 cup of rice (I use regular white rice, but you could use brown)

2 cups of water

2 teaspoons of Better than Bouillon Chicken flavor (if you are a vegetarian use the vegetable variety)

garnish with sliced scallions (optional)


In a large fry pan, heat the oil. Add the onion and rice. Brown both together until the onion is translucent and the rice is brown or "toasted".


Take the two cups of water and add to a small or medium saucepan. Add to the water 2 teaspoons of the Better than Bouillon. Stir the bouillon until it is dissolved.


Add the rice and onion mix to the water and cover with a tight lid. Cook on medium heat for about 15 minutes. Check and see if the waters been absorbed and rice is tender. If not, cover and cook for another 5 minutes or until done.


Serves about four people depending on the serving size. I guarantee there will be no leftovers!
