Life is full of Pasta-bilities!

I love pasta and so does Kal. We try not to eat too much of it (the whole carb thing) but this recipe satisfies the desire and great on the calorie count. Its fast, easy, and delicious and that qualifies it for a share. Manga!


Penne Pasta, Shrimp and Asparagus. (4 servings, each 1 1/4 cups)




I cup of uncooked penne pasta

1 T olive oil

2 cups sliced fresh asparagus. (that's about 3/4 lb., sliced into 1-inch pieces. (be sure to cut off the white ends and I like to slice on the diagonal)

1/2 cup of chopped onions (about 1 small onion)

1 t minced garlic (jarred is fine)

1/2 lb of peeled, deveined medium shrimp

1/2 t dried oregano (you can add up to 1 teaspoon if you want or 1 teaspoon of Italian seasoning

1/4 t red pepper flakes

1 (14.5 oz) can diced tomatoes with basil, garlic, and oregano, undrained. If you want to use fire roasted, go ahead)

1/4 cup shredded parmesan cheese (pre shredded or fresh. I usually up this amount depending how much you like parm)



  1. Cook pasta as package directs until its al dente. Drain when done. (keep about 1/2 cup of the water to throw into your sauce)

  2. While the pasta is cooking, heat the oil in a large heavy skillet over medium high heat. Add the asparagus, onion, garlic and shrimp. Sauté for about 5 minutes. Make sure the shrimp are done (they will "curl up" and become translucent. Add the oregano, red pepper flakes, and the tomatoes. Cook over low heat for another 5 minutes or until thoroughly heated. Add the cooked pasta to the sauce. Plate and sprinkle with the parmesan cheese!


This is easily doubled. It's also delicious cold, so great to take along on a picnic. Calorie count for one serving is 292. Pair with tossed salad and a crisp glass of white wine and dinner is done!

I made Liz's 'I hate (or love) salmon' recipe the other night even though my husband and I have always loved how I made salmon. We both loved Liz's so much that now I will have to make it all the time. - Barbara L.
